Our story
Salam Juice & Mutbaq opened in The Arabian Village in Richardson in March 2026 to serve the food you find on the streets of Yemen: mutabbaq straight off the griddle and juice made from whole fruit.

Where we come from
Salam’s owner comes from Yemen, where mutabbaq and fresh juice are everyday street food, and is also behind Gilgamesh Restaurant & Bakery here in Richardson.
Salam is the simpler idea: two Yemeni street classics, made by hand to order and served in a bright room in The Arabian Village on Greenville Avenue.
The name
Salam
means peace. In Yemen, and across the Arab world, it’s also how you say hello.
In Yemen, mutabbaq usually means eggs and green onion. At Salam, the kitchen keeps coming up with different types of flavors
.
The griddle
Mutabbaq means “folded”. It began as street food in Yemen and spread across the Arabian Peninsula. A ball of dough is stretched until it’s thin enough to see through, filled, folded into a square parcel and cooked on a flat griddle until the outside crackles.
Ours comes savory, with eggs and herbs, Akkawi cheese, potato and cheese, minced beef or tuna, or sweet, with cream and honey, Nutella or Dubai chocolate and pistachio.

At the table
Every mutabbaq comes off the griddle cut into nine pieces, with lemon to squeeze over the top, pickles and pink turnips. Eat it with your hands, the way it’s eaten in Yemen.
Red zhug
A spicy Yemeni sauce made with red peppers.
Mango pickle mayo
Creamy and tangy, with a little sweetness.
Garlic sauce
Smooth and bright, for those who like it mild.

The juice bar
Our juices come from the street-vendor culture of Yemen: thick, cold and made from whole fruit. We blend single fruits like mango, strawberry and watermelon, mix our own blends such as Berry Bliss and Minty Melon, and make shakes with fruit and cream.
The Salam Araysi takes its name from the Yemeni word for newlyweds; at home it’s poured at weddings. Here it’s on the menu every day.

The room
Salam is a place to sit down, not just pick up. Come for lunch, come back for a juice in the evening.
Hand-woven baskets line the walls.
Bright tables and leather-upholstered chairs.
Tucked in the corner, for whoever gets there first.
What we care about
Every mutabbaq is stretched, filled and folded when you order it, then cooked on the griddle while you wait.
Juices, blends and shakes are made from fruit and poured to order, so every cup is fresh.
Yemeni favorites, from mutabbaq to masoub and areeka, made the way they’re made in Yemen.
First time at Salam?

A mutabbaq with eggs and herbs, Akkawi cheese, minced beef or chicken, cut into nine with three sauces.

One fruit, like mango or strawberry, or the Salam Araysi, the drink poured at Yemeni weddings.

Share a sweet mutabbaq: Dubai chocolate and pistachio, Nutella, or cream and honey.
Take a marble table, or the swing chair in the corner if it’s free. In a hurry? Order ahead for pickup.
