Mutabbaq means “folded”. It began as street food in Yemen and spread across Saudi Arabia and the Gulf, where you’ll find it cooked on griddles from breakfast until late at night.

A ball of soft dough is stretched until it is thin enough to see through. The filling goes in the middle, the sides fold over it into a tight square parcel, and the whole thing cooks on a hot flat griddle until the outside is crisp and golden and the inside is soft and hot.

You may see the name written mutabbaq, mutabbag, motabbaq, mutabak or mtabbaq. It’s the same dish.

Our savory mutabbaq comes with melted Akkawi cheese, a blend of cheeses, potato and cheese, creamy spread cheese, minced beef with Yemeni spices, seasoned tuna, or eggs with fresh herbs.

For something sweet there’s cream and honey, Nutella, and our signature Dubai chocolate mutabbaq, finished with melted chocolate, pistachio cream and crushed nuts.

Every mutabbaq is cut into nine pieces and served with lemon to squeeze over the top, pickles and pink turnips, and three sauces: red zhug, a spicy Yemeni sauce made with red peppers; a creamy mango pickle mayo; and garlic sauce.

Eat it with your hands, the way it’s eaten in Yemen, with a cold fresh juice on the side.
